Converting Bitcoin to fiat is the act of selling BTC and receiving a government-issued currency — USD, EUR, GBP, BRL, INR — in exchange. Three things happen in sequence: the BTC is delivered to a venue (an exchange order book or a market-maker), the trade matches at a price, and the resulting fiat is paid out to your bank account through a payment rail.
